Raspberry Creamsicles

An icy popsicle coats a creamy ice cream center to create a refreshing and nostalgic frozen treat. I had a berry puree of raspberries, strawberries and POG (Passion-Orange-Guava juice) from some other Popsicles I made and some homemade French vanilla ice cream. It turns out that this is a divine combo.

Happy 4th of July! Simply serve the cake of your choice with blueberries, strawberries and homemade whipped cream for an easy and festive red, white and blue dessert. I used an angel food cake because it is light and perfect for the heat of the summer.

Rice Krispie Treats are great for summer parties, barbeques and potlucks because they are quick, easy and always a crowd-pleaser. For the 4th of July I added red and blue M&M’s for a fun red, white and blue treat. I cut them into stars and flags to fit the theme.

4th of July Popsicles

Homemade French vanilla ice cream, a raspberry-strawberry puree and whole blueberries unite to make a patriotic Popsicle, perfect for your 4th of July celebrations. The Rocket pops of my childhood were the inspiration behind these red, white and blue treats but my take on them is a little bit more wholesome with the addition of homemade ice cream and blueberries, raspberries and strawberries instead of sugary colored juices .

Strawberry-Raspberry Popsicles

Popsicles are super easy to make as long as you have some time to let them freeze. At the most basic level all you need is some fruit juice. For extra vitamins and some oomph in flavor, I like to blend in fruit, leaving some of the berries whole and some of the other types of fruit in chunks. You can use whatever combo of juices and fresh or frozen fruit that you’d like.
