Rice Krispie Treats are great for summer parties, barbeques and potlucks because they are quick, easy and always a crowd-pleaser. For the 4th of July I added red and blue M&M’s for a fun red, white and blue treat. I cut them into stars and flags to fit the theme.
Parfait, French for “perfect,” is traditionally a French dessert. In the United States it has transitioned into a healthy and filling breakfast or snack, typically made with yogurt, granola and berries. In the spirit of the 4th of July I layered strawberry, vanilla and blueberry yogurts with homemade granola to create a festive red, white and blue breakfast.
Homemade French vanilla ice cream, a raspberry-strawberry puree and whole blueberries unite to make a patriotic Popsicle, perfect for your 4th of July celebrations. The Rocket pops of my childhood were the inspiration behind these red, white and blue treats but my take on them is a little bit more wholesome with the addition of homemade ice cream and blueberries, raspberries and strawberries instead of sugary colored juices .
These yogurt pops are essentially a frozen version of our breakfast smoothies. I used a combination of frozen blueberries and blackberries. You can mix and match the fruit, yogurt and fruit juice of your choice.
It is easy to make make funfetti cupcakes (or a whole cake, for that matter) with the cake batter of your choice. They look just like the cake mix versions but taste much better!
This rich, creamy and chocolaty dessert definitely isn’t for the weak. A little bit of the buttery cookie crust topped with vanilla-chocolate pudding and whipped cream goes a long way.
Strawberry season is one of my favorite times of the year. We have to wait a bit longer here in the Pacific Northwest but I am so ready, as the arrival of the strawberry marks the beginning of summer in my book. I decided to jump-start summer with these strawberry shortcake cupcakes.
Limpa bread is a traditional Swedish rye bread that is flavored with anise seed, molasses and sometimes orange. When I was little, my family was lucky enough to have a friend who would bake us this bread on occasion, introducing me to its rich, intoxicating flavor.
These soft snickerdoodles will literally melt in your mouth. The addition of brown sugar to the cinnamon-sugar mixture in which the cookie dough is rolled adds a wonderful complexity to the flavor.
Inspired by the lettuce wraps at Asian-fusion restaurants such as P.F. Chang’s, this Italian rendition is satisfying and light and makes a perfect lunch, appetizer or light dinner. It is also a great way to turn leftover chicken parmigiana into a new meal, combining the main course chicken dish and the salad all into one.
