This ranch dressing is better than store-bought versions and doesn’t contain MSG (which I recently discovered is in many commercially-produced varieties). I also love the fact that it is made using light sour cream instead of mayo.

When compared to many other muffins, these ones are actually pretty low in butter and sugar. I like making them in miniature because they are bite-sized and easy for my 1 1/2-year old son to eat.

We liked the carne asada tacos that we made a while ago so much that we decided to make them with chicken. The marinade is very similar to that which we used on the steak. It is such a simple dinner to pull together but the flavors are so satisfying.

Puerto Rican Arroz Con Pollo

Many variations of arroz con pollo can be found throughout Latin America and the Caribbean but some claim that it is the unofficial national dish of Puerto Rico. The dish, literally meaning “rice with chicken,” is thought to have originated in Spain and has definite similarities with the popular Spanish dish, paella. The pimiento-stuffed green olives in this version are a signature addition from Puerto Rico.

French Strawberry Glace Pie

This recipe comes from my Great Aunt Gladys, and my mom has been making it since before I was born. I love the fact that it is filled with fresh, uncooked strawberries. My aunt traditionally made it with an easy coconut pie crust but I like to use my Coconut Macaroon Tartlet Shells for a chewier (and butter-less) crust.

I love the coconut macaroon tart shells so much that I decided to fill them with a simple combo of sliced strawberries and homemade whipped cream. They are light, refreshing, and offer an alternative to strawberry shortcake when strawberries are in season.

This pound cake is moist and has a rich vanilla flavor. Serve it plain or topped with a powdered sugar glaze. It is also excellent with chocolate fondue or strawberry shortcake!
