Pasta Rustica
This pasta dish is similar to my Pizza Pasta and also closely resembles a traditional lasagna with the ricotta cheese. The simple Italian flavors come together quickly to make a sophisticated meal.

These turkey chili cheese fries are a great way to feed your family veggies and lean protein because the turkey chili is loaded with peppers, tomatoes, ground turkey, beans and more. Plus, by baking the hand-cut French fries, this rendition of chili cheese fries offers a healthier alternative to the standard ballpark dish.

These enchiladas come together quickly because the tortillas, chicken and sauce can be prepared in advance. Using homemade ingredients produces the yummiest result but if you are short on time or energy you can always substitute store-bought versions.

Inspired by the lettuce wraps at Asian-fusion restaurants such as P.F. Chang’s, this Italian rendition is satisfying and light and makes a perfect lunch, appetizer or light dinner. It is also a great way to turn leftover chicken parmigiana into a new meal, combining the main course chicken dish and the salad all into one.

This version of Chicken with Forty Cloves of Garlic is easy because you put all of the ingredients in a casserole dish, bake it in the oven and forget about it. The end result is a rich, comforting meal. If the thought of forty cloves of garlic frightens you, there is no need to worry. The garlic flavor mellows as the cloves cook and when they are done, they are rich and buttery, perfect for slathering on your favorite bread or even the chicken itself.

Flautas (Spanish for flutes) are a similar concept as taquitos but are typically a little larger and made with flour tortillas. As I did with my taquitos, I baked my flautas for a healthier version, filling homemade flour tortillas with a simple taco beef filling and cheese.

I’ve received such good reviews about my homemade chicken sausage that I decided to transform it into meatballs. Spinach is the star ingredient that earned these meatballs a spot on my Tapas For a Cure menu, but I also love the fact that they are made with chicken.

This rendition of a chicken and eggplant Parmesan sandwich is satisfying and light, a perfect summer meal. Wrap the chicken and eggplant in large lettuce leaves for a main course or in smaller leaves for an appetizer.

Eggplant parmigiana is a great way to get your family to eat eggplant because by dredging it in egg and flour, it becomes soft and tender and the flavor mellows out. In this rendition of eggplant parmesan, I have combined chicken and eggplant parmesan strips into a sandwich. When mixed in with the chicken strips, your family may not even notice that eggplant is included.
