Easter Egg Quesadillas

Dress up your everyday quesadillas (or sandwiches) by cutting them into Easter egg shapes and letting your kids decorate them. My son has just as much fun decorating healthy food as he does cupcakes and sugar cookies. And it’s just one more way to make healthier fare fun and festive.

Pierogi

Pierogi (also commonly spelled perogi) are Eastern European dumplings that are filled and then either boiled, baked or fried. As with other dumplings found around the world pierogi vary with each chef and can be stuffed with sweet or savory fillings. This Polish version of pierogi comes from my husband’s Grandmother who was of Polish descent. They are filled with a typical Polish filling of boiled potatoes, cottage cheese and onion.

Cauliflower and Cheese

Cauliflower and cheese is the British take on the popular comfort food: macaroni and cheese. What a clever way to disguise cauliflower. We recently had some friends over for dinner and I made this dish…nobody missed the pasta! I can’t wait to try this with broccoli, carrots and other vegetables. What veggies wouldn’t be good with a cheesy Mornay sauce?!

Homemade Neapolitan Pizza

Sourdough starter gives pizza crust a light airy texture and a subtle sourdough tang. One of the keys to this type of pizza is cooking it at an extremely high heat. We place the pizza stone on bricks in the bbq so that the heat can circulate on the bottom and top of the pizza, allowing the top of the pizza to char before the bottom burns. The result is pretty darn close to a perfect Neapolitan pizza! Let everyone in the family choose the toppings for a pizza.
