My family loves our lighter chicken tikka masala sauce so much that we decided to make the Indian curry dish with fish instead of chicken. I knew it was a successful meal when my son devoured the fish just as quickly as he does the chicken.

Kids will love making this cake. It is quick, easy and results in a moist chocolate cake. I like to ice the cake with vanilla buttercream frosting but you can decorate your cake as desired.

It has been salmon season in the Pacific Northwest. With my husband’s last catch we smoked some of the salmon fillets in a wood chip smoker. Serve the smoked salmon with crackers and cheese for a healthy snack and an easy ‘gourmet’ hors d’oeuvre.

My inspiration for this soup came from a curried butternut squash soup that was one of my favorites at a restaurant when I was younger. I used a basic recipe from The All New All Purpose Joy of Cooking as my guide, but I made several slight variations and ultimately added a bit of curry powder. Tempura is a popular Japanese dish consisting of battered and fried seafood and vegetables. It is light and lacy, different than the typical heavily-fried items we find in the states. It is a unique and fun way to get your family to eat vegetables and seafood.

Fruit crisp is one of my favorite desserts because the oatmeal crumble on top adds a sweet crunch to each bite while allowing the fruit to remain the star of the dessert. I use whatever fruit is in season so this time I chose peaches for a grand finale of summer.

I recently made my pumpkin bread in the form of mini muffins. With the addition of chopped walnuts on top and a layer of cream cheese frosting in the middle, I transformed some of them into little cupcake bites, perfect for a dessert party or an afternoon treat.
