Fortune cookies have been on my list for a while now so when DailyBuzz Moms announced the Thanksgiving Kids Table 9×9 I thought that it was the perfect opportunity to make “I am Thankful for…” Fortune cookies.
This caramel corn is one of the many food-related traditions in my family. All you have to do is boil the caramel ingredients for a few minutes, toss the popped popcorn in the caramel, and bake it in the oven to golden, crispy perfection.
One of my favorite things about fall is eating squash — they are easy to prepare, flavorful, nutritious and comforting. I’m now a big fan of delicata squash and I especially love the fact that you can eat the beautiful yellow skin that is striped in green.
Sometimes basic is best, as with this simple roasted kabocha squash soup flavored with sage mushrooms. Inspired by all of the beautiful and interesting winter squash that we’ve seen on our recent trips to local farms and pumpkin patches, this soup satisfies my craving for warm comfort foods now that the chilly fall temperatures are here to stay for a while.
Summer is lingering, providing us with beautiful warm days, but as of today I can say that fall is finally in the air, bringing with it fall cravings {enter sweet potatoes and maple pecans}. It’s the perfect equation for an autumn ice cream. Although it’s worth saying that I’ve been making this ice cream for over a year now and it has been a family favorite in every season of the year.
This fusion of Mexican and Italian cuisines was inspired by the Italian Caprese salad. Tomatoes are still the base of this stacked salad but I have traded out the other ingredients {mozzarella cheese, basil and balsamic vinaigrette} for their south-of-the-border counterparts that my family loves so much.
Fruit bouquets make the perfect healthy snack in addition to being eye-catching centerpieces for parties, BBQ’s and picnics. They can be as simple or as elaborate as you would like. You {and your kids!} can make a detailed plan, brainstorming how to make different fruits look like specific flowers or you can simply jump into an making an arrangement using an assortment of fruits, cookie cutters and skewers.
We don’t have a shamrock cookie cutter so we improvised with green hearts and iced a stem on the plate. Spinach juice gave the powdered sugar glaze its beautiful natural green color.
With or without silly faces, these fruit and spinach smoothies make a quick, healthy and kid-pleasing breakfast, snack or dessert.
Rainbow cakes are everywhere these days. I made one last summer and my family and guests loved the bright, vibrant colors. But in the back of my mind I couldn’t help but think of the negative discussion and controversy surrounding chemical food coloring. My husband was actually the one to challenge me to make a rainbow cake with natural food dyes.
