Fiesta Chicken

This dish was one of my husband’s favorites growing up. Now that I have made it, I can see why he liked it so much. It is a great meal for the work week because it comes together quickly. You can even make it ahead and let it chill for several hours or overnight. Kids will like the cheese-stuffed chicken. I like to serve it with Mexican rice, beans and cheese-stuffed Anaheim peppers.

Sliders

Make an assortment of mini hamburgers for a party or a fun family meal. Lay out a smorgasbord of toppings and let everyone build their own slider. Serve the mini burgers with fruit salad, potato salad, french fries or sweet potato fries.

Tortilla de Patatas

The tortilla española is similar to a frittata and nothing like the tortillas used in Mexican food. Tortillas de patatas, filled with thinly sliced potatoes, are one of the most popular kinds of tortilla that you will find but you can also add the veggies and meats of your choice.

Paella Mixta

Paella has become the national dish of Spain and a symbol of Spanish cuisine in the eyes of many people outside of Spain. However, though you can find paella throughout Spain, it is truly a regional specialty of Valencia. Traditionally, the seasonings in paella are simple – saffron, garlic, salt and pepper – allowing the natural flavors of the meats and seafood to shine. But the beauty of this dish is that you can load it with the ingredients of your choice. My personal favorite is paella mixta, made with all sorts of seafood, sausage and chicken.

Baked Chicken Nuggets with Creamy Bacon Dip

This recipe comes from Food Network, courtesy of Brian Boitano. But we baked the chicken instead of frying it. The nuggets still have the crunch of fried chicken but it tastes lighter.

Samaki Wa Kukaanga (Kenyan Fried Fish)

These spicy fried fish fillets from Kenya are simple to make. I was surprised to discover that the seasoning is very similar to other rubs and marinades that we often use for chicken and fish, comprised of several of our “go-to” ingredients that you, too, will most likely have on hand.

Pfannkuchen (German Pancakes)

This recipe comes from my good friend, Milena, in Germany. Similar to crêpes, German pancakes are large and thin and can be used for both sweet and savory dishes. When I made these recently for breakfast, I made the sweeter version and added grated apples and blueberries to some of the pancakes.

Thai Chicken Curry

The following recipe provides a basic outline of Thai Chicken Curry but you can adjust the quantity of the ingredients according to your taste. Alter the spice with the chiles, the salt with the fish sauce, and the flavor and color with the curry paste.

Moqueca de Peixe e Camarao

This version of Moqueca de Peixe e Camarao (Brazilian Fish and Shrimp Stew) comes from the state of Bahia in northen Brazil. It reminds me of a Thai curry because of the coconut milk. You can make it with only fish – Moqueca de Peixe – or only shrimp – Moqueca de Camarao – but we liked it with the combination of seafood.

Camarones con Tocino (Bacon-Wrapped Shrimp)

This was one of my husband’s favorite meals when he was a kid. He remembers always ordering it at Mexican restaurants. It’s a new meal for me. But, what’s not to love?! Bacon makes everything better. And it’s a fun presentation for kids.
