My sister-in-law came up with this idea when she was experimenting with some leftover Easy Pizza Crust dough. It reminds me of the dessert pizza we would order at pizza parlors when I was little but it’s better because you can control how much sugar and butter you add.
The tortilla española is similar to a frittata and nothing like the tortillas used in Mexican food. Tortillas de patatas, filled with thinly sliced potatoes, are one of the most popular kinds of tortilla that you will find but you can also add the veggies and meats of your choice.
Paella has become the national dish of Spain and a symbol of Spanish cuisine in the eyes of many people outside of Spain. However, though you can find paella throughout Spain, it is truly a regional specialty of Valencia. Traditionally, the seasonings in paella are simple – saffron, garlic, salt and pepper – allowing the natural flavors of the meats and seafood to shine. But the beauty of this dish is that you can load it with the ingredients of your choice. My personal favorite is paella mixta, made with all sorts of seafood, sausage and chicken.
One of our favorite dips is a simple combination of homemade salsa and light sour cream. The sour cream tones down the spice and allows you to get a hint of heat without letting the spice overpower the other flavors. It is a flavorful dip for chips and veggies and also makes a creamy spread for sandwiches and burgers.
One of our favorite Mexican restaurants makes a salsa out of chiles de Arbol, which has a different spice than the red salsas that you typically find at Mexican restaurants. After many incredible meals at this restaurant, we decided to try to make the chile de Arbol salsa at home. Our recipe is essentially our homemade salsa verde with the addition of chiles de Arbol. You can vary the spice level by adjusting the quantity of chiles.
This creamy potato salad is reminiscent of the classic potato salad that I had growing up. I love that I now don’t have to feel guilty while eating it. It is made with light sour cream instead of mayonnaise so it is actually a nutritious side dish loaded with vegetables, healthy proteins and starch.

I had never made split pea soup before so I thought it was time to give my Grandma’s recipe a try. The soup thickens as it cools so if you are eating leftovers you may want to add more water or broth to reach your desired consistency. I was happy that my son liked the chunks of pork because with each bite of meat he was also eating split peas, a great source of lean protein.
These spicy fried fish fillets from Kenya are simple to make. I was surprised to discover that the seasoning is very similar to other rubs and marinades that we often use for chicken and fish, comprised of several of our “go-to” ingredients that you, too, will most likely have on hand.
This recipe comes from my good friend, Milena, in Germany. Similar to crêpes, German pancakes are large and thin and can be used for both sweet and savory dishes. When I made these recently for breakfast, I made the sweeter version and added grated apples and blueberries to some of the pancakes.
