My recent experiment making Apple Cinnamon Oatmeal for breakfast inspired me to mix up my morning oatmeal routine again. This time, I had some leftover chunky Blackberry Maple Syrup from our Mardi Gras pancake feast. My breakfast was so good that next time I’ll be making the blackberry syrup specifically for my morning oatmeal!
Oatmeal is quick, satisfying and full of fiber and other nutrients. Making oatmeal with old-fashioned, whole-grain oats instead of the instant packets really doesn’t take much time and allows you to control the amount of added sugar that you consume. We usually eat our oatmeal topped with frozen blueberries, banana slices and brown sugar but I recently had the urge to make apple-cinnamon oatmeal, inspired by one of the traditional instant oatmeal packet flavors.
This cucumber salad is inspired by the Japanese cucumber salad that is served in sushi restaurants. It’s the perfect light starter for many meals.
This hearty two-bean chowder is a healthy comfort food, perfect for the cold winter weather we’ve been having. Mashing a portion of the beans is a healthy way to make the soup thick and creamy like a chowder.
This sweet and sour vinaigrette can be used in many ways and you can adjust the ingredients according to your taste. As for the ingredients in the salad itself, you can use whatever you have on hand.
I used my cilantro-lime vinaigrette taco salad recipe (adapted from a Cooking Light recipe) to make a refreshing avocado salad. I kept it simple with avocado, corn, black beans and bell peppers but you can adjust the salad fixings to your tastes and what you have on hand.
Happy Valentine’s Day! For a quick, fiber-filled Valentine’s Day breakfast I made bran muffin hearts with my Mini Heart Baking Pan. If you don’t have heart pans you can bake part of the muffin batter in a 9×13 pan and cut out hearts with a cookie cutter.
After discovering how simple it is to make sushi at home and inspired by the colorful rainbow roll, I decided to make a more kid-friendly version of this popular sushi roll. Your kids can help roll the sushi and brainstorm different toppings to give the roll the rainbow colors.
Tater tots are a U.S. invention, known for their crispy exterior and small, cylindrical shape. They are traditionally deep-fried but I wanted to make a healthier version so I opted to bake them. A cross between french fries and hash browns, they are a perfect way to mix up how you serve your family potatoes.
Making sushi at home is easy, fun and a great way to disguise healthy foods, such as the smoked salmon in this roll. My son loves cream cheese so this roll is an easy sell.
