Strawberry Shortcake
Kick off the summer season with homemade strawberry shortcake. I usually use homemade scones as the base but the two key ingredients, in my opinion, are locally-picked strawberries and homemade whipped cream.

Chocolate-covered strawberries have always been one of my favorite desserts. They are sweet, light and refreshing. This is the perfect time of year to make them because strawberries are in season. Get your kids involved by taking them to a strawberry U-pick and then letting them decorate their own strawberries.

This is a great sausage for pizzas and pasta. By finely chopping the spinach and cooking it in the sausage, my son (along with the rest of us) consumes healthy leafy greens without even noticing!

Carne asada literally means “roasted meat” in Spanish and is typically a flank steak or skirt steak that is thinly cut and roasted or grilled. These carne asada tacos were the closest that we have come to replicating the tacos from one of our favorite Mexican restaurants. One of our favorite Mexican restaurants makes a salsa out of chiles de Arbol, which has a different spice than the red salsas that you typically find at Mexican restaurants. After many incredible meals at this restaurant, we decided to try to make the chile de Arbol salsa at home. Our recipe is essentially our homemade salsa verde with the addition of chiles de Arbol. You can vary the spice level by adjusting the quantity of chiles.

This recipe comes from Food Network, courtesy of Brian Boitano. But we baked the chicken instead of frying it. The nuggets still have the crunch of fried chicken but it tastes lighter.
