Homemade Sushi: Spicy Scallop Roll

Once I realized how easy it is to make sushi at home, I wanted to try making one of my favorite sushi rolls: Spicy Scallops. To make it appropriate for my toddler I decided to cook the scallops. If you or your kids don’t like spicy foods, you can omit the sriracha sauce.

Homemade Sushi

Making sushi at home is easier than you think and you can use your imagination, disguising many healthy foods within each roll. Sushi is also very kid-friendly because your kids can help make different rolls, with or without seafood, according to each person’s tastes.

Fish Tikka Masala

My family loves our lighter chicken tikka masala sauce so much that we decided to make the Indian curry dish with fish instead of chicken. I knew it was a successful meal when my son devoured the fish just as quickly as he does the chicken.

Smoked Salmon

It has been salmon season in the Pacific Northwest. With my husband’s last catch we smoked some of the salmon fillets in a wood chip smoker. Serve the smoked salmon with crackers and cheese for a healthy snack and an easy ‘gourmet’ hors d’oeuvre.

Pumpkin Soup

My inspiration for this soup came from a curried butternut squash soup that was one of my favorites at a restaurant when I was younger. I used a basic recipe from The All New All Purpose Joy of Cooking as my guide, but I made several slight variations and ultimately added a bit of curry powder. For a festive autumn meal, serve the soup in hollowed out pumpkins.

Tempura

Tempura is a popular Japanese dish consisting of battered and fried seafood and vegetables. It is light and lacy, different than the typical heavily-fried items we find in the states. It is a unique and fun way to get your family to eat vegetables and seafood.

Homemade Pizza Pockets

Pizza pockets are easy to make at home. My family liked the sausage & mushroom-filled pockets and the spinach & three cheese-filled pockets but you could use whatever filling you want.
