Pozole (also commonly spelled posole) is a traditional Mexican soup made with hominy and meat, such as chicken or pork. This version which comes from my world-traveling friend uses chicken breasts and comes together quickly, but the longer you let it simmer the more the flavors will develop. It is simple to make, just allow up to an hour to properly caramelize the onions. {Although I have to admit that I recently made it when I was short on time and I cooked the onions at a higher temp for only about 30 minutes and the soup still turned out great.}
This chili is easy to make and can be made on the stovetop or in a slow-cooker. I used leftover BBQ chicken but it would also be good with ground chicken, turkey or beef.
