I made this African Peanut Stew to celebrate Africa Day yesterday. Variations of the stew can be found throughout West Africa. This version has edamame which offers a healthy dose of protein along with other nutrients but you can also add meat if you would like.
There are many different flavors in this sandwich that mask the fact that it’s made with healthy ingredients. It’s colorful, visually appealing and easy to make, too.
This pound cake is moist and has a rich vanilla flavor. Serve it plain or topped with a powdered sugar glaze. It is also excellent with chocolate fondue or strawberry shortcake!
Kick off the summer season with homemade strawberry shortcake. I usually use homemade scones as the base but the two key ingredients, in my opinion, are locally-picked strawberries and homemade whipped cream.
In honor of Syttende Mai, the Norwegian Constitution Day (also known as Norway’s National Day), I decided to make a blueberry cake and decorate it like the Norwegian flag. Local strawberries are in season so they became a natural choice for the red foundation of the flag.
This is a great sausage for pizzas and pasta. By finely chopping the spinach and cooking it in the sausage, my son (along with the rest of us) consumes healthy leafy greens without even noticing!
My sister-in-law and her girls taught me how to make this healthy and kid-friendly snack. The rolls are easy to make and they’re a great way to disguise asparagus. And your kids can help you make the rolls.
These banana bars could be the best thing banana that I have ever eaten. They are not too sweet and have a delicate banana flavor. The cream cheese frosting adds a light creamy sweetness and definitely makes them a dessert. But we loved them without frosting, too.
This cream cheese frosting is easy to make and great for many desserts, including carrot cake, cinnamon rolls and banana bars. The addition of the cream cheese makes the frosting more substantial and less sweet than a standard powdered sugar glaze.
Make an assortment of mini hamburgers for a party or a fun family meal. Lay out a smorgasbord of toppings and let everyone build their own slider. Serve the mini burgers with fruit salad, potato salad, french fries or sweet potato fries.
